White Beans with Miso, Greens, and Radishes

This recipe checks a lot of boxes for me – simple, plant-based, delicious, and spring-y!  Not sure about all of you but this true Colorado spring is wearing on me.  I woke up to 2 inches of snow this morning and it’s almost May!!!  Radishes are a great addition to any home garden, easy to grow and full of flavor, antioxidants, and minerals such as potassium and calcium.  We ate this as our dinner main dish but it could make a nice side dish as well!  Leave me a note below if you try it or if you are looking for ways to incorporate more plant-based eating into your diet.
